Hankering for some fried chicken? You might want to try Texas Chicken Singapore’s new ayam percik-inspired flavour, which is available for a limited time. 

This collaboration features local chef, TV personality, restaurant owner and entrepreneur Shahrizal Salleh, better known as Chef Bob. 

Chef Bob’s Ayam Percik recipe draws inspiration from the popular staple at Ramadan bazaars and night markets in Singapore and Malaysia. The dish is traditionally cooked over coconut husks and brushed with a rich, smoky sauce.  

It is known for its bold flavour profile, with savoury, sweet, tangy, and spicy notes. 

To achieve this distinctive aroma, Chef Bob and his team developed a proprietary blend using natural smoky elements and carefully balanced spice levels. The spice is meant to make one sweat “without being sweaty” and shouldn’t overpower the palate, he said.

“I grew up with these flavours. You don’t see them as often now. I wanted to bring that memory back – the smokiness, the bold flavour, the warmth – and present it in a modern way through Texas Chicken,” shared Chef Bob in a March 24 press release.

Taste test

If you’re not good with spicy food, don’t worry. The ayam percik sauce won’t leave you reaching out for a glass of water. 

During a taste test by AsiaOne on Thursday (Apr 2), we found the sauce to be on the creamy and sweet side. In fact, we felt that it could have been spicier. 

We could also taste the various elements incorporated into the sauce, such as lemongrass, tamarind, galangal and turmeric. 

The sauce is served separately, allowing diners to control how much sauce they add to their chicken.

While we enjoyed the fried chicken, those looking for a spicy kick may be left disappointed. 

We also tried the Ayam Percik Burger, which features a chicken patty doused in the sauce, with tomatoes and lettuce between two fluffy buns.

While the chicken patty and sauce were good, we found the buns too thick for our liking. 

Chef Bob’s Ayam Percik flavour will be available for a limited period from April 2 to May 13 at all Texas Chicken Singapore outlets.

Options include the Chef Bob Ayam Percik Chicken Combo ($12.50), which comes with two pieces of chicken, mashed potatoes, coleslaw, and a Honey Butter Bun. 

There’s also the Chef Bob Ayam Percik Burger Combo ($10.50), which comes with the burger, mashed potatoes, coleslaw, and a Honey Butter Bun. 

If you prefer finger food, there’s the Chef Bob Ayam Percik Tenders Combo ($11.50), which comes with mashed potatoes, coleslaw, a Honey Butter Bun, and ayam percik dipping sauce. 

And if you plan to enjoy the meal with a friend, there’s the Chef Bob Ayam Percik Buddy Combo ($21.50), which comes with two pieces of chicken, one Ayam Percik Burger, two mashed potatoes, two Honey Butter Buns, and two cups of Sjora Lychee Berry. 

If you just want chicken, you can opt for the Chef Bob Ayam Percik Chicken Box ($26.50). 

Chicken for a cause and more 

Chef Bob’s collaboration also coincides with Texas Day on April 17, marking Texas Chicken’s 16th anniversary in Singapore.

To commemorate this milestone, the brand will roll out special promotions, giveaways, and limited-edition merchandise. 

For instance, customers will receive an exclusive limited-edition vest that can be converted into a tote bag with every Texas Chicken meal purchase, while stocks last.

Texas Chicken Singapore will also continue its annual Ramadan charity initiative by providing complimentary meals to selected beneficiary organisations. 

This year, the brand extended its support to Pertapis Education and Welfare Centre.
