If you enjoy grilled fish, there’s a new spot to check out as Japan’s Shinpachi Shokudo is opening at Nex this Saturday (Aug 15).

Charcoal Grill Shinpachi will be the chain’s first overseas outpost. The eatery has over 100 outlets in Japan. 

Here, diners can choose from over 10 charcoal grilled fish Teishoku sets. 

Top picks are Saba Bunka Boshi Set ($15.90) featuring Japanese Pacific mackerel served with grated radish and shoyu, Salmon Harasu Set ($18.90) with fatty salmon belly as well as Hokke Set Half ($11.90) with an Atka mackerel dish.

Other items on the menu include the Saba Mirin Boshi Set ($12.90), with Japanese Pacific mackerel marinated in mirin and soy sauce, Sawara Saikyou Set ($15.90) featuring Spanish mackerel marinated in a Kyoto-style sweet white miso, Akaou Kasu Zuke Set ($15.90), which comes with Japanese red snapper marinated in sake lees, as well as Unajyu Set ($35.90), served with premium pickles and sansho (mountain pepper).

For those who aren’t fans of fish, the restaurant also serves set meals such as the Chicken Shoga Yaki Set (from $9.90) and Grilled Beef Tongue Set ($28.90).

A key part of Shinpachi Shokudo’s menu is its use of himono, a traditional Japanese method of preparing fish by gutting it, soaking it in brine and drying it before cooking. 

The process removes excess moisture and concentrates the fish’s natural umami flavour while maintaining a plump, springy texture. 

The fish is then cooked on a two-layer charcoal grill developed by Shinpachi Shokudo, with one layer used to cook the fish through and the other to sear the exterior to create a lightly crisp crust. 

In celebration of its Singapore debut, Charcoal Grill Shinpachi will roll out a promotion on its opening weekend. 

Diners can enjoy up to 50 per cent off the restaurant’s top three best-sellers — Saba Bunka Boshi Set, Hokke Set Half and Salmon Harasu Set — at $8.80 each. 

Shinpachi Shokudo is the latest in a string of Japanese F&B names that have made their way to Singapore’s shores in recent months. 

In May, popular Japanese yakitori chain Torikizoku opened its largest outlet in the world at VivoCity — offering a flat pricing of $3.90 across its menu items for an affordable izakaya experience.

In March, Osaka-based Tonkatsu Daiki opened at Ngee Ann City. The restaurant had been recognised by the Michelin Guide Japan for four consecutive years.

That same month saw the opening of Sio Pasta in Raffles City Shopping Centre. It is a casual pasta concept by Japanese chef Shusaku Toba, chef-owner of Japan Michelin Guide-recognised fine dining restaurant Sio Aoyama in Tokyo.

Other notable openings include Hikiniku to Come, which specialises in charcoal-grilled hamburg steaks and Gatten Sushi, a conveyor belt sushi spot.
